Study finds emulsifiers in processed food may be factor in obesity epidemic
Researchers found that emulsifiers, which improve the texture of processed foods and extend their shelf life, alter the normal environment of the stomach, inducing intestinal inflammation. That, in turn, promotes inflammatory bowel disease and obesity related disorders that can lead to type-2 diabetes, cardiovascular and even liver disease.
The study marks a wake-up call about the potential dangers of a diet that relies too much on processed food, said Andrew Gewirtz, professor at the Institute of Biomedical Sciences at Georgia State University.
“The upshot is eat less processed food,” he said.
The study, published in the journal Nature, found that the emulsifiers altered the makeup of the gut microbiota, a varied group of 100 trillion bacteria that normally are separated from the intestine by a mucus layer. The emulsifier-spiked diet enabled bacteria to essentially eat their way through the protective layer, coming into contact with the epithelial cells in the intestine.
That is not a good thing, Gewirtz said.
